Old Fashioned Pie (Sourdough Crust)

Rich gooey brownie-pudding-like batter in a buttery flaky sourdough pie crust!

Ingredients

  • 1/2 cup Butter unsalted*
  • 1 cup Cane Sugar
  • 2 oz Baking Chocolate unsweetened
  • 2 lg Eggs beaten
  • Splash of vanilla extract
  • Pinch of Salt
  • 1 9" Pie Crust

Instructions

  • Preheat oven to 375F.
  • Place homemade or store-bought pie crust into pie plate or round pan. Set aside.
  • In a small saucepan, combine unsweetened chocolate and unsalted butter. Bring to a boil.
  • Immediately remove from heat. Set aside to cool.
  • Once cooled, whisk in beaten eggs, sugar, vanilla and salt. Omit salt if using salted butter.
  • Whisk continuously for approx. 45-60 seconds to combine ingredients and incorporate air into the batter.
  • Once the batter has been mixed thoroughly, pour into prepared pie crust.
  • Bake for approximately 20-25 minutes.
  • Allow to cool for at least 15 minutes before serving to allow inside to set.

Notes

**If you don't have unsalted butter, it's not the end of the world. Use salted butter and omit the extra salt
*ALL of your ingredients need to be ICE COLD before starting your pie crust. The colder they are, the more time you have. Room temperature ingredients plus the heat of your hands will cause your dough to be sticky and nearly impossible to handle.
FREEZE your bowl, rolling pin, grater & dough scraper/spatula for hours before you begin - if not overnight. The difference this makes is astronomical. It is truly the difference between you getting the best pie crust ever or having a total meltdown in the kitchen (pun intended).
** If you want to skip the Sourdough Pie Crust altogether, go for it! Buy ready-made pie crust from the store and roll it out until it fits your pie plate. Place into the plate and just make the filling. It'll take way less time and honestly still super delicious!
